NC Curriculum Standards

Culinary I Standards:

Understand components of professional practice in the foodservice industry.

Understand basic food preparation.

Understand basic garde manger.

Understand basic baking.

Understand basic foodservice operations.

Culinary II: Performance Based Measurement Course

Culinary Arts and Hospitality II is a (PBM) Performance Based Management Program. Students will participate in food preparation, service, and sale of food to customers through a student based enterprise program. Students must successfully complete their PBM to advance to Culinary III.

Understand advanced foodservice operations.
